The D.O.P. labeling (Protected Origin Designation) has been issued in order to protect two different types of the “Pecorino” cheese: the sweet and the seasoned ones, namely “Fiore” the former, which is the oldest type produced on the island and the latter, the “Romano”, locally pliedproduced for as much as the 80% of the national demand.
Two types of “Ricotta” cheese are also common, a sweet one and a seasoned one: the former is a dairy product presenting a white downy paste, the latter has a more compact paste, almost rindless, with a curing period of about a month that sometimes can be found smoked.

Sardinian sheep milk can boast a well deserved fame ,his genuinely delicate milk is usually managed on a very short distribution chain, like in the past, directly from the producers to the consumers or else it only travels short distances to be processed locally thus preserving its nutritional values. Sardinia also accounts for some half a million goats, producing a very distinctively tasting milk, owed mainly to the animal feeding habits, such animals in fact cannot stand enclosures and a much greater variety of essences become part of its diet.
